INGREDIENTS:-
~ Rice ---------- 3 cups
~ Split black gram(urad dal dhuli) ---------- 1 cup
~ Chopped onions(cut into long and thin sliced) ---------- 1/2 cup
~ Chopped green bell pepper(shimla mirch), cut into long and thin sliced, as onion ---------- 1
~ Chopped tomato(cut into long and thin sliced, without seeds) ---------- 3
~ Chopped green chillies ---------- 2-3 or to taste
~ Chopped coriander leaves ---------- 2 tbsp
~ Minced or grated, ginger ---------- 1 tbsp
~ Red chili powder ---------- to taste(optional)
~ Salt ---------- to taste
~ Oil ---------- as required
METHOD:-
1:- Wash urad dal and rice separately.
2:- Soke in some water such that they are totally covered for separately overnight.
3:- Blend them separately, using a little water, to a smooth paste.
4:- Mix them in a deep vessel and add the salt and mix well.
5:- Cover and keep the batter to ferment for overnight or for a minimum of six to eight hours ina warm place.
6:- Take required quantity of batter in a bowl and sufficient water to get the desired consistencyand mix well.
7:- Heat a flat griddle(tawa), put 1 tbsp of oil and wipe with a muslin cloth.Spread a ladle ofbatter thickly .Cover and cook for a minute.Drizzle some oil all around.
8:-Now sprinkle some of the onion, green bell pepper, tomato sliced, ginger, gree chillies andover that sprinkle some of the coriander leaves, red chili powder and salt to taste andoverturn the uttapam.
9:- Cover and cook on low heat, on the other side similiarly.
10:-When both sides are sufficiently cook lift it of the tawa.
11:-Repeat for the rest of the batter.
12:-Serve hot with the coconut chutney or sambhar, as you like.
